I wonder this too!? I always thought you wouldn't eat them b/c you would have no idea about the freshness, though...

Guinea eggs are sooooo good! We eat them any chance we get. Well, I did let my hens sit on some recently, and just yesterday had a carpet of keets in my barn, lol. Seriously, they are awesome for baking, and they are fabulous fried, scrambled, etc....we esp. love them fried. They are rich and good.

BTW, you can test guinea eggs for freshness just like chicken eggs.

I'd eat every guinea egg I could find, because it means fewer new guineas! OK, I'm sorry if you all love your guineas but we had a million when I was growing up and they got on my nerves so much!

In all seriousness, the eggs are good.

I don't raise guineas, but I've gotten eggs from the local poultry farm. The eggs are very good. The yolks seem to be about the same size as chicken egg yolks, but the egg overall is smaller, so the ratio of yolk to white is higher. I like them! Oh, I was surprised the first time I broke one--the shells are quite a bit thicker than chicken eggs.

DH said that DD asked for one specifically this morning He said the yolk seemed thick but other than that, no difference! We'll eat 'em if we find them I guess!

this is so good to know!
and.. you test for freshness by how they float or don't float in water, is that right?
