what's your favorite simple vegan meal?

i need some ideas. dp is gone 5 nights a week so it's just me and dd (10 mo). i've got to stop eating amy's soups or hummus for dinner! i'll steam up some sweet potato or broccoli for dd, but i just don't cook for myself — everything seems too complicated especially with her clinging to my legs, and i don't want to deal with dishes, and once i put her to sleep i have a bazillion other things to do. but i'm not feeding my body well and i feel it.

so what is your go-to dish? something quick and easy, but fresh and healthy?

thank you in advance

(i'm not averse to the whole freezer stocking thing, but i need direction. we don't own a microwave, and something that takes an hour to reheat seems counterproductive, kwim?)

Oven roasted seasonal veggies over quinoa!!

Also -
simple soysauce/ginger stir fry
lentils and brown rice cooked in the rice cooker with curry spices
giant plate of dark bitter greens sauteed in sesame oil and ginger
a bean + a grain + avocado over a big bed of lettuce

I'll think of more . . .

I tend to do a lot of pasta or one pot meals when I am alone.

I don't have recipes RIGHT Here, right now, but I'll try to come back and post some.

I second the veggies over quinoa. Quinoa cooks up so fast and you can always store leftovers in the fridge. In fact, right now I'm having sauteed cabbage and kale over quinoa for lunch. Yummy!

A hummus wrap is good too. Slather some hummus on a whole wheat tortilla (add some olive tapenade for an interesting flavor), add lettuce, grated carrots (or whatever else you like) and roll it up.

Pastas are easy, especially if you have prepared sauce on hand.

Tacos or burritos with taco shells (soft or hard), refried beans, avocado, rice (if you have any leftover), salsa, and if you're lucky enough to be able to get it, Daiya cheese.

Taco salad is big here... Greens, shredded carrots, beans, salsa, whatever else you like. The kids like crushed up tortilla chips on top.
