I was thinking about making a plaster handprint for same holiday. Other ideas:
•*If 3-year-old made a drawing, you could use it in a craft by tracing it. For example, you could wood burn it to make a clock, or paint it on a wallet, or screen print it on a t-shirt, etc. etc.
• 3-year-old could paint a pillowcase
• 3-year-old could write a short story about something s/he did with dad and illustrate it

My dad's favorite gift from us when we were little was hand-decorated brown paper bags for his lunch. We'd make a bunch and he'd have a new, different bag each day to bring to work. My DH uses a reusable lunch bag though so that won't work. Hmm maybe on the same idea, get one of those coffee mugs where they can draw a picture and then insert it into the mug? And maybe draw a bunch of pictures so they can be interchanged?
Get a picture of DH & the 3yo together & then let the 3yo decorate the frame?
Does your DH have a desk job? Something for his desk, like painting a can to hold his pens?
