Any Fish Cake Recipes?

I had some once from a deli and I remember liking them, maybe it was the sauce. Anyway trying to include more fish in our diet and thought this would go over with the kids.

Anyone have a recipe they like and would like to share?

Mine is not really a recipe, I don't really measure.

I use one small can of boneless salmon, drained.
1 egg beaten
1/4 to a 1/2 of an onion diced fairly small
a stalk of celery if I have it also diced
a few handfuls of bread crumbs
a healthy pinch of dill
a splash of milk (maybe a TBLS)
a pinch of salt
and a good grind of pepper

You want mix that will hold together in patties, but isn't dry and crumbly or soggy and gloppy.

Make into patties and brown in a skillet in a bit of oil.

I'm still working on a sauce for these, my dad once did one with cucumber and dill that was amazing, but he can't remember where he got the recipe or what was in it. I keep trying to copy it and failing.

I got a recipe from here on this board somewhere that is delicious! I have adapted it a bit...

1 tall can of salmon (I buy the kind with bones from Trader Joe's. It is not labeled "with bones", but it is Alaskan salmon and has a pink and blue label.)
1 cup oatmeal (We buy bulk oats and I grind them up a bit first.)
1-2 eggs (You need enough egg to hold everything together well.)
Then, I add various seasonings depending on what we have... finely chopped spring onions, fresh parsley, minced onions, chives, etc.

Form into patties (4-8) with your hands. Then, I fry them in coconut oil until lightly browned. YUMMY!!!
