Breakfast ideas for dairy, egg, red meat allergic friend

Just got a call about a surpise visit from a dear friend. She's deathly allergic to dairy, eggs, red meats, and citrus. I'd love some TF ideas for what to feed her, especially for breakfast. My kids look forward to Saturdays b/c we have sourdough pancakes and sausage (or bacon). Not nice for BFF. We went TF last summer, so my old standbys (scrambled tofu, cereal and soymilk, applesauce nonsoaked muffins) won't do. Anyone know of an eggless sourdough pancake recipe? I think I've seen one before. My butcher might have pork-free poultry sausage...
Other ideas are coconut milk/strawberry smoothies + toast. I'd love ideas, especially those that don't involve buying special ingridients that my family won't use (egg replacer/xanthan gum, etc.). I'd love to turn her on to TF eating, but I don't want to freak her out as her family is pretty (understandably) soy-dependent.

Well, I can completely relate to your friend. Right now, i am having issues and I don't even know what I ate that did me in.

How about an array of fresh in-season fruits, granola, small containers of soy yogurt, fruit juice? Also, check the freezer case of Whole Foods to see if they have a bread she might like. I don't think they would have egg/dairy free in the bakery, but they might.

Honestly, if you keep it simple, everything would work out.

We like to do sausage and fruit salad for weekend breakfast. You could probably find turkey sausage really easily, and just make sure your fruits are non citrus fruits. Oatmeal might work too.

The butcher did have chicken sausage, so that's good. We're good on bread - I can bake a fresh loaf of sourdough, this time slathered with coconut oil instead of butter when hot out of the oven. Mirlee, I've got a bunch of frozen berries and rhubarb - yummy, fruity goodness. My granola is presoaked in dairy, so that's a no go. I think yogurt's out as well - I'm not comfortable serving soy to a friend or family member. (If concerns about soy's healthfulness are news to you, you may want to check out the Good Eating Guidelines" sticky thread. I think soy worry is addressed there...
I'm excited about intro'ing my friend (who sorely needs good sat fats in her diet) to the deliciousness that is coconut milk/oil.
Keep those ideas coming. Still seeking eggless sourdough pancake recipe.
