what's your favourite summer recipe?

so, it's hotter than... well, it's hot.

what is everyone's "too hot to cook" faves?

i make a greek-style summer salad that is just chunks of cucumber, sweet onion, and tomato, with homemade greek dressing - olive oil, lemon juice (or apple cider vinegar), minced raw garlic, and oregano. i make the dressing in an old salsa jar, just shake it up and pour over! you can add spiral pasta (we use brown rice pasta), black olives, kalamata olives, and/or crumbled feta. almost all the kids love it, and it's quick and cool.

That sounds delicious!

Subbing because I've been working on turning our weekly menus toward warm-weather fare. It's always a challenge for me because most of my best recipes are soups and stews and wintery meals.

I like to make quinoa salads- one with cherry tomatoes, avocado, corn and a dressing of lime juice, cilantro, olive oil and cumin. The other has avocado and strawberries in it with a light vinaigrette.

I make a ton of salads- I also really like lots of lettuce with black bean burgers chopped up, strawberries, cucumbers and whatever else you see fit with balsamic vinaigrette and then when you mix it all up stuff it into a pita and eat it like a salad sandwich.

One of our favorites is an old Rick Bayless recipe for cooked shrimp "ceviche". I add water to it, until it's the texture of gazpacho, and we eat it like soup, with saltine crackers or tortilla chips. It's so good. Because I learned to like it in restaurants around here, I frequently use the (cheap) small, shrimp and/or frozen shrimp. That's how the restaurants taste, we like it, and it makes it more affordable.

We also like black bean/corn salad. 3 parts beans, 1 part corn, plus onion, cilantro, jalapeno, then top with a vinagrette heavy on the lime juice, garlic, and cumin. It's always a hit. You can add tomatoes, chicken, and/or avocadoes if you have them. Or substitute a different kind of bean (black eyed peas make "Texas cavair" which is fun to say at a potluck ).

And, our old stand-by, salads of tomato, cucumber, and vidalia onion, all marinated for a couple of hours in vinegar, water, salt, and sugar. Yum!! I cold eat that all day.

I like to make cold soups. A cold strawberry soup is so refreshing in the summer. Tomorrow I am making a cucumber avocado soup, super easy and delicious: large cucumber, 2 avocados, handful scallions or chives, juice of a half lemon, small amount vegetable broth, and a cup of creme fraise (not sure what this is in english - sort of between a yogurt and a cream). Put all in a blender until smooth. Serve cold.

I make that too, we love it. I add bell peppers to mine

We make it too with beans and corn and a combo of various colored peppers, green onions, seeded and chopped cucumbers, cilantro and a vinaigrette. I'd love to add tomatoes but DH won't eat them. I serve it with avocado on the side so that the avocado doesn't ruin the leftovers.
