Quiche?

Quiche!

Just beat together 5 eggs, 1 cup of milk, 1 tbsp melted butter ( i use smartbalance), 1/2 onion, 1/2 pepper, and some frozen spinach. Or you could just do eggs and cheese, or you could just do eggs and spinach. make sure to use more salt than you think you need.

Empanadas!

Make up a mexican style meat filling (taco seasoning, onion, peppers...my MIL adds olives) Thaw the pie dough and make little "pockets" with the filling. Like, tear the crust into pieces and wrap up the filling. Bake until crust is done. Our male friends call these "meat cookies" and they're ahuge hit.

I've heard you can use them to make samosas but I haven't tried it before.

Thanks for all the great suggestions
I don't know which one to choose! Now I'll actually be buying frozen pie crusts so I can try all these great ideas!

I second chicken pot.

I third chicken pot pie! or, one of my favorite variations- turkey pot pie with all the leftover veggies from TG dinner, gravy mixed with a little white wine to thin, and dried cranberries. oh so good. You can have all the Thanksgiving flavors in the middle of summer. mmmmm.

(of course, this is for when you stock up on pie crusts when they go on sale in Mid November, now that you have all these recipes!)

Who wants to share their chicken potpie recipe??

Personally, I prefer chicken pot pie to have a top crust. So if this is one-crust, I'd use it for shepherd's pie/cottage pie instead.

I had a frozen pie crust and had no idea what to do with it.

I sauteed onion, garlic, black olives, basil, chickpeas, and whatever veg we had in the fridegs(I think it was a combo of eggplant and mushrooms) and then baked it in the pie shell with vegan cheese on top and everyone loved it. I've actually made it a few more times w homemade pie crust since ds asks for "PIZZA PIE!!!"
