I gave up soda a while back and thought now that I am way over my addiction to it, a natural fizzy drink may be nice. I got this recipe from the gfcf kids yahoo group
1/2 cup ginger, finely chopped
1 ½ cups water
½ cup honey (or less to taste)
2 tablespoons lemon rind
6 cups club soda
ice cubes
In a saucepan, combine ginger and water. Bring to boiling over medium-high heat.
Reduce heat, cover, and simmer 5 minutes. Let cool. Refrigerate overnight.
Return to saucepan. Heat and stir in honey and lemon rind. Heat to boiling. Boil
2 minutes, stirring occasionally.
Let cool and strain. Refrigerate syrup until serving time.
For each serving, spoon 3 tablespoons syrup over ice in a tall glass. Stir in 1
cup chilled club soda.
I missed it said lemon rind, I thought it said lemon peel, maybe because I had that in the cupboard (organic of course)... so I used the dried lemon peel. I bought sparkling mineral water for the club soda, not sure if they are the same thing. We tried a couple glasses of it, but neither my daughter or I cared for it. So I took what was left and squeezed an orange, adding the juice into it. I poured it over 6 organic chicken thighs and let marinate in refrigerator overnight. I baked it at 350 for an hour in the same pan, with the juice still on it. I made rice and when it was done, I poured the juice from the chicken on the rice. It was good. I am not a person that understands much about using spices in cooking, I cook like a bachelor most my life but I am getting the hang of it! We all liked it!
