Making sour cream from raw fresh cream?

So...do I just leave it out on the counter for a while? Is it really that simple? How long?

you definitely can. That's traditional (french) creme fraiche. a lot of people will also culture it, either with a commercial sour cream culture, or a buttermilk culture, in which case, just stir in about a tbs per pint.
