Mini casserole recipe

Has anyone tried "Puffets" made by Peas Of Mind? They are like a mini casserole thats full of veggies, sold in the freezer section.

I saw them the other day and thought they looked like a great idea.....but a little pricey...

Now I just need a recipe! I could mess around in the kitchen for a while and come up with one myself, but who has time for that?

So, anyone made a homemade version of these little meals? Or have a great casserole recipe that would work?

I just checked google
They look to me like little souffles. Here is a recipe for a kid friendly spinach souffle that you could adapt for whatever ingredients you like:

Mini Spinach Soufflé
Makes 4

You'll Need
6 large eggs
Âľ cup half-and-half cream or milk
2 cups fresh spinach, chopped
½ cup cheddar cheese, grated
ÂĽ tsp salt
Butter for greasing ramekins
Prep and Cook
Preheat oven to 350 degrees.
Mix eggs, milk and spinach in a blender until spinach is finely chopped.
Add grated cheese and salt and pulse for another minute.
Lightly butter ramekins and place on a baking sheet.
Pour soufflé mixture into the ramekins.
Bake for approximately 30 minutes or until lightly browned and firm.
Serve with fruit, cucumber spears and fresh bread or toast.
Good to know: This quick and healthy soufflé is perfect for breakfast, lunch or dinner. Your toddler may enjoy different flavour combinations, like broccoli and havarti or ham and brie.

I was using casserole as the search term and not really finding what I wanted. "Souffle" is a much better description!
