I really want to like my lacto fermented vegetables, but I believe it might take some work. First I want to make sure they taste like they're supposed to since it's my first time. They taste like they've been doused with club soda.

Keep trying! I started with cucumber pickles, since it is something I already liked and I know what it's supposed to taste like. LF Dill pickles and bread and butter pickles taste the same, flavor-wise, as regular so it's an easy switch.

I think my pickles have that funny taste when they aren't quite fully fermented. Try letting it go another couple of days maybe.

what did you make. With my gingered carrots I can only really use them as garnish, not an entire side dish. The kraut and other veggies they are amazing!

I made Latin American Sauerkraut, salsa, tomato pepper relish, ginger carrots, and corn relish all from NT.

I've only done some sauerkraut and pickled garlic so far. Neither's ready yet. I think I could stand the sauerkraut in tiny doses, like on a hot dog (not that I eat hot dogs, come to think of it!) - but I wouldn't want to chow down on the stuff by the bucketful. Either this means mine isn't very good, or it isn't ready, or I just don't like sauerkraut!
