Need healthy zucchini bread / cake / cookie recipes

I'm harvesting zucchini faster than I can use it! Does anyone have a healthy recipe for zucchini bread / cake / cookies? I'm looking for ones that use all whole grain flour, oatmeal or coconut flour etc...

I'm finding lots of supposedly whole grain recipes but, the first ingredient is white flour with a little whole wheat thrown in.

I did find this one that looked good but, I'd love to incorporate oats or coconut flour???

I often just substitute whole wheat flour for whatever kind it recommends and honey or maple syrup for the sugar.

Another really yummy option is zucchini cakes. Combine shredded zucchini (squeeze excess liquid out first) with bread crumbs, parm, salt, pepper, egg, and seasonings of your choice. Make thin patties. Saute in butter and olive oil. Soooo yummy.

I just had a YUMMY zucchini cake/bar thing this morning at a MDC playdate, here's the recipe in this thread

Zucchini Bread

3 eggs
1 cup oil
2 cups brown sugar or honey or apple sauce
2 cups raw zucchini
2 ½ cups ww flour (can be ½ ww and ½ white)
½ wheat germ (or more ww flour)
3 tsp. Cinnamon
1 tsp. vanilla
1 tsp. Salt
1 tsp. Baking powder
1 tsp. Baking soda
1 cup walnuts (optional)

Beat eggs until light and fluffy. Add oil, zucchini, vanilla, and sugar mix well. Add dry ingredients and nuts. Grease and flour 2 bread pans.

Bake 1 hour at 325. Makes 2 loafs.

We have a variation on this that my DH and DD love. Same mixture (though I use farmer cheese instead of parm, and add olive oil and lots of fresh dill), then spread it in a pie pan and bake at 350 for an hour. Super delicious and it tastes fine left over and reheated in the toaster oven or microwave.
