I have cabbage overflowing from my fridge! What do do?

Veg bubble and squeak!

I love cabbage and onions as a side for pierogi, just saute in oil or butter. Cabbage is also great added to stirfries with peanut sauce on the side.

cabbage is my fave!!!

I make kraut (tons of fun)! sometimes some coleslaw (yum, yum) and I cut it up fine and hide it in pretty much every dish I make (to get some extra greens in the kiddos)

I also think of these little wraps my mother would make all the time when I was little (she is from Austria) I am sure there was some sort of meat in them but you could easily make a veg version.

Love cole slaw - so many variations.

There is the traditional creamy (though my "traditional" version uses vegenaise these days) with or without seeded cucumber. There is the vinaigrette version. There are things you can add like dried cranberries, apple slices, nuts, sunflower seeds. There is the honey mustard version. There is the asian version (add julienned peapods, carrot, green onion, rice wine vinaigrette and either chopped peanuts, cashews, or sesame seeds).

Last night, mine had cabbage (obviously), green onion, dried cherries, toasted sesame oil, peanuts, and a dash of chipotle powder with a vinaigrette dressing. Sounds insane, but so good.

Dh makes a wicked coleslaw w cabbage, grated carrot, finely sliced pickles, finely sliced onions, cumin, corriander seeds and a dressing made out of pickle juice..sounds weird but its wicked good

I also fill cold spring rolls with cabbage, and use it for the base of regular salads as well
