We're going on vacation (renting a house) soon and I decided I did NOT want to cook and clean a kitchen every day. So I have been making things to freeze, take and just reheat.
So I'm like, DUH, let's just make a double batch.
Which has lead to me realizing a lot of things I make can easily be doubled and frozen.
Today I pulled out the first of my freezer meals and some frozen muffins since we ran out and I didn't have time to bake today and I am SO happy. WHY did I not think of this sooner?
So if you have this at the back of your mind (you know, oh yeah, one day that would be a good idea...) START NOW.
