After reading this, it makes me wonder about grass fed nitrate free meats?

They defined processed meat as any meat preserved by smoking, curing or salting, or with the addition of chemical preservatives. Meats in this category included bacon, salami, sausages, hot dogs or processed deli or luncheon meats.

Unprocessed red meat included beef, lamb or pork but not poultry.

They found that on average, each 1.8 oz (50 grams) daily serving of processed meat a day — one to two slices of deli meats or one hot dog — was associated with a 42 percent higher risk of heart disease and a 19 percent higher risk of developing diabetes.
So what do you think??

I've been wondering the same thing but we always buy uncured hot dogs and uncured bacon but eat a lot of salamai

I would bet that most if not all of the studies covered by the meta-analysis that the article is based on were all done with conventional meat products, so I have major doubts about how any of it applies to grass-fed/pastured meat of any type, whether processed in some way or not.

I think that lumping together traditionally and chemically processed meat is not wise. There is a huge huge difference between processed deli meat which is full of binders and stuff and sometimes even cooked in plastic, and smoked, salted or naturally cured meat.

deli meats, no, though I do very very rarely eat them. traditionally processed meats, I think are healthy.

I totally agree with this!

Well, plenty of traditional cultures have done OK on biltong, sausage, salami and smoked meats, no? Without soaring rates of heart disease? So I wouldn't worry too much about really good pastured nitrate-free traditionally-made salami.
