favorite way to eat rhubarb?

There are a lot of veggies out there that I haven't tried cooking before so I decided that every couple of weeks I'm going to try something new that's in season. This time I want to try rhubarb. (Is that a veg or a fruit?)

I have had it before in strawberry-rhubarb pie which was delicious but I want to find something with less sugar. So, how do you like rhubarb?

Rhubarb custard pie. Not sure that has any less sugar, though.

I believe technically it's a vegetable, but it's usually treated as a fruit.

Yes - I've never seen savoury recipes for rhubarb, just sweet ones. Favourites include rhubarb crumble (Jamie Oliver has a nice recipe), pies and stewed rhubarb with custard mmmmm

I love it as pie, I add very little sugar if I have sweet strawberries, it comes out fine.

Of course I do strawberry rhubarb pie

I've read it can be a nice sauce for pork so I want to try that. Still add a bit of sweetener, but not so much as a dessert.

Yeah, rhubarb sauce with pork is super yummy, especially pureed with sweet onion. Check out this site as well: http://www.rhubarbinfo.com/recipe-index.html

Here's a recipe for rhubarb brownies that was a hit at my house:

rhubarb brownies

Ingredients:

* 1/3 cup coconut oil
* 1/2 cup carob powder or unsweetened cocoa
* 6 eggs
* stevia, sugar, or honey to taste
* 1-1/2 tsp Liquid Stevia (flavor of choice) or honey
* 1/2 tsp salt
* 1/2 tsp vanilla
* 1/2 cup coconut flour
* 1 cup rhubarb, chopped or pureed

Directions:

In a saucepan at low heat, blend together coconut oil and carob powder. Remove from heat and let cool. In a bowl, mix together eggs, stevia, liquid stevia, salt and vanilla. Whisk coconut flour into batter until there are no lumps. Fold in rhubarb. Pour batter into a greased 11 x 7 x 2 inch or 8 x 8 x 2 inch pan. Bake at 350 degrees F for 30 to 35 minutes. Makes 20.

The other day I was at our natural foods co op and they had raw rhubarb slices for dipping in agave syrup. It was really good!

stewed rhubarb, rhubarb pie (minus the strawberries; I like it better), rhubard crisp, salsas, juice it and add to lemonade,or eat it raw. Just be sure that you don't eat the leaves or roots.
