vegetarian freezer meals

On many thrifty websites people do freezer cooking days to fill their freezer with food to resist the temptation of eating out or buying expenisive convenient foods.

What kinds of meals do you freeze??

I have been making sweet and savory waffles.

Tomorrow I am going to make a bunch of falafel and freeze that.

I would love to collect and share ideas here.

I like to freeze soup in meal size portions. And casseroles like shepherd's pie, lasagna, broccoli/cheese/rice, and cheese enchiladas. I also like to freeze seasonal fruit for smoothies later. And pancakes too.

You can also make bean and rice enchiladas, or just plain beans and rice. My mind is drawing a blank on the other meals
