dp just got me veganomicon for my bday

i'm so excited... everything looks SO GOOD.

those familiar with the book, what's your favorite recipe???

The baked beans are really good, another fave around here is the veg cassoulet with biscuits (probably made those two the most reguarly). And we were way impressed with the cornmeal crusted tofu.

I was just flipping thru my cookbook tonight thinking about making the Rustic white beans. Anyone made this w canned beans. Where is the recipe for the cassoulet? I can't seem to find it. Oops-just found it-think I may make this tomorrow. Is it time consuming? Hope I have some navy beans.

Chickpea cutlets
Potato and Kale enchiladas (love these but it is time consuming)
Apricot glazed Tofu
Snobby Joes
Pumpkin baked Zita w carmelized onions
Piccata Recipe w olives/green beans (I usedTempeh by mistake but it was awesome)
Corn and Edamame salad
Bean Balls
Lemony Potatos
Black bean burgers

I heard the Pasta de La California is great but have never made it.

We love snobby joes and the every day tamales. We make a double batch of tamales and we literally COULD eat them every day!

Our faves are chickpea cutlets, snobby joes, and pumpkin baked ziti with carmelized onions.

I don't really use this cookbook that often. It seems like most recipes take 2 hours, dirty every pan in the house, etc. I always feel like many of the recipes need a good editor to trim some of the steps down and make them more manageable.

There are some good recipes for a special occasion, but I find the recipes are too involved for weeknights.

One of the simpler ones I do like is the Tamarind Lentils.

I agree that some of the recipes are time consuming-like the Baked Ziti and the Kale Enchiladas. I don't make the enchiladas often for that reason but they are so worth it. The recipes I listed above are not very time consuming w the exception of the 2 above. I'll have to try the Tamarind Lentils.

The cassoulet is semi-time consuming - I mean, you do have to clean the leeks and saute everything and make the biscuits but considering it's like a 'meal in one' it's not much worse than making some main dish and something else or two to go along. Plus I love having something to use some of our garden thyme. (It's really yummy too).

I really love the Potato Kale Enchiladas - actually its the Potato-Kale filling that is so delicious. I swore that the next time I made it, I would just make the Potato-Kale filling and serve that as a side dish. I didn't think the added enchilada part added that much to that awesome filling.

I don't have this cookbook, but I have to say I love the title! I recently read Neal Stephenson's Cryptonomicon, whose titled riffed off Lovecraft's Necromonicon. A cookbook playing with these titles...too funny!

Oh yeah, and the food sounds good too.

Tonight I made the Udon with Shitake Mushrooms and Kale in Miso Broth. I did change it a bit b/c I didn't have Shitake mushrooms and I didn't have Kale.
I just used cremini mushrooms and spinach and it turned out really good. I'm sure it would have been better with the Shitake mushrooms but thats all I had.
Hoping to make the cassoulet tommorrow. Mumkimum-do you think I could make this ahead of time or parts of it? I don't get home till after 7pm from the gym but have the afternoon. Maybe just make the stew part? and do the
biscuits when I get home?

Yes, I know it took me a few time to perfect them. I try not to make them too big.

I made the Cassoulet w biscuits. Found it to be pretty easy but it was kinda time consuming. The taste was good but not my favorite recipe. For some reason I could not get enough salt to make it taste good. My broth was low sodium so I added extra but it still was bland. I did not have fresh Thyme which I'm sure would have made a difference. It was good and the longer it sat the better it tasted. I did like the biscuits too. I think I will make this again but will definitely get the fresh herbs next time.

I made the "Autumn Latkes" and they were great the first time around since I didn't have the sweet potatoes on-hand. The latkes came out crispy, delicious, and well formed without sticking to my cuisinart stainless steel pan, at all. I used arrowroot powder instead of the cornstarch (didn't have any) and leeks as a substitute for the onions (not totally sure if it was supposed to be onion, the book is downstairs). The second time I made the Autumn Latkes I had the sweet potatoes called for in the recipe and they did not turn out well for me as I mostly got mushy latkes and they were sticking to my pan. I will make this again maybe another time this summer without the sweet potatoes!

I got this cookbook recently so I haven't made too many different recipes yet, but we love the chickpea cutlets and the lemony potatoes.

I find the chickpea cutlets work best if I make them quite flat so that they can cook through-- otherwise they are cooked on the outside sooner than the inside.

i love the veganomicon, and agree that the recipes are really complicated, but i usually read them through and then streamline them.

our favorite recipe by far is the tempeh with broccoli rabe, and we also love the chickpea cutlets, yum!

I liked the baked potato and greens soup and it wasn't too hard or time consuming.

The chewy chocolate raspberry cookies are SO good! And easy.

I don't have the book in front of me and I can't remember what else I've made and liked.
