okra anyone????

I was just gifted 3 bags of organic locally grown okra.......

Anyone have some yummy recipes?? I don't usually cook okra and my kids are not to enthusiastic about it.......
something saucy, spicy...

When I was a kid I liked fried okra, but I haven't had it in years and I have no idea how to make it. I used to eat it with my grandpa .

Alton Brown (Good Eats, the TV show) had a pickled okra recipe, can I find it?....

For two years now, I've been meaning to modify it to be a fermented recipe instead of a refrigerator pickle type recipe... if you use the recipe, or modify it to be fermented, can you let us know how it goes?

I like Alton Brown's recipes in general, he's also got a dry fried okra recipe that looks good, if you search the website.

My 4.5 year old loves pickled okra. We also put it in gumbo. I use zataran's gumbo mix and add okra and chicken. I'm sure you can find gumbo recipes online, but I've never mastered making a roux. I've always liked okra cut up and cooked in fresh pureed tomatoes with a little green onion.

Mmm, okra is a favourite summer dish here in Greece; you can find great fresh okra in abudance in the farmers' markets!

You can either prepare it as a vegetarian dish or with chicken (delicious this way!). The method is the same, but it's best if you use the oven for the chicken recipe:

1. Fry up some finely sliced onion and crushed garlic (in either olive oil or coconut oil).
2. Add the okra (hopefully it is young and tender) and stir it a bit in the oil.
3. Add fresh tomato sauce, salt, oregano and black pepper.

If you're preparing it in the oven with chicken then after step two transfer everything in an oven dish, add the chicken, the tomato sauce and the condimends.

If the okra is big and kind of woody then you can add a bit of vinegar to prevent it from opening up and becoming mushy.

should I slice the okra or just put them in whole??

I like to sautee sliced okra (typically using frozen) in bacon grease...adding a little water as needed to let them cook, but not so much that it's soupy...taste for ss&p

I also stew sliced okra with diced tomatoes...sometimes with diced zucchini, and/or diced eggplant plus basil, oregano, etc....mmm good hot or cold

you can add it to soup; I like to sautee sliced okra a little with the other veggies before adding the broth...supposedly it keeps it from getting 'slimy'

you can steam it whole and eat it that way...that's the main way we ate it growing up, but that is serious OKRA flavor...might be acquired taste for some

it can also be grilled whole if you have some sort of grill pan so that it won't fall through

Saute cut up bacon and onion till bacon is crisp. Add Diced Tomatoes, and cut up Okra. Simmer till hot.

Serve over brown rice.

Here people never slice okra because it then releases that slimy liquid that it makes it unattractive to many.
And that is why they add vinegar in cooking, to prevent it from opening up.

o.k so last night I took one bag, sliced the okra, mixed tapioca starch, garlic and sea salt and then fried them.....mmm came out crispy and yum. All my kids ate some they did'nt all love it, but would probably eat it again.
tonight I try the no slice stew method.

i would slice and toss with corn meal and spices and pan fry it. yum

Do use some in scrambled eggs. Just sautee them in a bit of oil and add the eggs. It's fantastic
