Tonight we are having honey baked lentils with steamed brocolli, carrots and brussell sprouts.

Just got home from visiting my family for the weekend. My dad bought me The Conscious Cook, Vegetarian Bible and a Moosewood cookbook. He loves to buy me cookbooks! He's probably bought over 20 for me! I'm so excited to look through them and pick out new things to try!

Cindy - score on the cookbooks!!! That's so great that your dad is so supportive. My mom is, but my dad is such a diehard meat kind of dude (with gout and a huge gut to accompany him )

Tonight was sweet potato-black bean nachos - really good!

Sun we went to make dinner for my grandma And my uncle and cousin were over. We made a beautiful salad w lettuce from our garden, And a huge stirfry on rice noodles, I made a peanut butter sauce for some and thai green curry sauce for the rest. For dessert we had angel food cake with berries we picked and soy vanilla icecream

Last ngiht was miso soup and fresh veggies.

Tonight no idea. BUT I have pretty much everything for sweet potato black bean nachos...so Im thinking that sounds super good Keeta!

Let's see...I peeled and cubed one med-large sweet potato and sauteed it with 1 medium chopped onion and about 4 cloves of minced garlic in a tablespoon of olive oil until the onion was translucent. I then added a splash or two of water and put a lid on the whole deal to steam the sweet potato a bit so that it would get soft. In the meantime, I pressure cooked my quick-soaked black beans (you can definitely use canned, about a can's worth, drained). When the sweet potato is soft, add the beans, some salt and pepper and I added some fresh chopped oregano and chili powder to ours. Oh, and I had cooked the beans with a dried red sweet banana pepper, so I chopped that and added it to the pan, too. Then I just spooned it all onto the chips that I had laid out on a cookie sheet. I added some shredded cheese (you could skip this, use vegan shredded cheese like Daiya or make your own nacho nooch sauce) and broiled it just a few minutes, until the cheese was melted. It was soooo good!

So we ended up having nachos YUMMM. I roasted the sweetpotato w onion, garlic, tomoatoes, tomato paste, cumin, corriander, and basil, thai basil, cilantro frm the garden, adding cooked black beans at the end. I made a nutritional yeast cheese sauce. And layered the nachos w the tomato mixture and cheese sauce and topped with black olives and avocado chunks. We had it with salad and kale chips YUM

Tonight dh works late but a friend is coming to dinner. We're going to tackle the grocery store(which will be a mad house sine its a holiday tom) and make peanut butter stirfry on rice noodles..she heard about sundays meal and wants that lol

Mmm the nachos sound divine!

We had grilled cheese and tomato soup last night - comfort food. Tonight we're having a fig and sunflower seed salad, roasted asparagus and an artichoke from our garden.

I made the nachos last night too! So yummy and so quick. I just did the onion, a can of beans, a package of frozen sweet potatoes and spices. It was ready in about ten minutes.

Last night I decided on green curry, cold spring rolls w peanut butter sauce to dip and we had soy chocolate peanut butter icecream for dessert YUM

Tonight I made a quick olive oil, tomato, garlic, basil, arugala, black olive pasta and cuke and carrot sticks

Today we made "golden bowls" from The Grit. It's buttery (or in our case earth balancey) brown rice topped with nooch fried tofu, sauteed veggies (we did corn and summer squash), and yeast gravy. They were unbelievable-- super rich and tasty.

Tonight was black bean & quinoa patties (that I thought were great but no one else did ), lemon garlic green beans & cantaloupe.

I am so tired of spending so much time & energy planning & prepareing meals to end up with nothing but fighting. I just can't please these people no matter what I do & I really am about to just give up. Sorry vent over...

Golden bowls sound good! Is The Grit a cookbook? Can you post the recipe for the gravy/sauce?

Tonight I made cold taco salad - really good. The dressing is made with pureed tomatoes, vegenaise, chili powder, and red wine vinegar. Just poured that over kidney beans, olives, chopped tomatoes, red peppers, scallions, and shredded daiya cheese. Then served over lettuce and crushed tortilla chips.

I didn't mix in the lettuce so I was able to serve just the bean mixture along with chips to my picky 5 year old who usually doesn't do salads. It was a good way to avoid making 2 dinners, while DH and I could still enjoy a big salad. Great summer meal with no cooking!

I'm right there with you sister...seriously! I'll ask dh for days ok what do you want to eat next week..I DONT CARE..ok then I'll make something and I get oh I dont really like that WTH!

I made my 1st sucessful batch of fried rice tonight. I don't know why I've never been able to make it taste rihgt before. We had it with some simple soy sesame noodles, edamame & (frozen) eggrolls.

DS2 still refused to eat tonight. How dare I put something on his plate that has peas in it, gees! I don't what is up with this kid, but I am REALLY over the meal time battles. Everyone else loved it.

Not a vegan family, but had a yummy vegan dinner I wanted to share -- pan-fried tofu and greens with almond ginger drizzle from Feeding the Whole Family by Cynthia Lair.

It was the first time I've made it, though I bought the cookbook in 1998!

Whole family loved it!

at mil's last night we had her bean salad: black beans, corn, red peppers, edamame, red onion, dressed with a mix of tomatillo salsa and rice vinegar.

also lovely butter lettuce and avocado salad.

today i'd like to try cucumber-watermelon soup—but i have a feeling we'll just eat watermelon with cukes on the side. a strainer sounds like too much effort.
