Cold quinoa recipe?

Thread Starter
I cooked some quinoa this afternoon, and would like to serve it cold for dinner (with fish & a veg). I've had quinoa salad type things, but don't remember any specifics. Can someone help me? To work with, I've got vinegars, olive oil, fresh basil and an assortment of produce (carrots, celery, red & yellow onions, garlic, asparagus, haricot vert, scallions at least)...

Thank you!

There's a recipe from a natural food store that I just found, and I was going to try it this week. So I don't know how it will turn out, but basically, add to the cooked, cooled quinoa some cherry tomato, chopped cucumber, green beans and chopped parsley. Then mix with a lemon vinaigrette - 3 tbsp. olive oil, 2 tbsp. lemon juice, 1 tbsp. apple cider vinegar, 1.5 tsp Dijon, salt and pepper and chopped mint to flavour.

I think you could just substitute whatever chopped vegetables you like, and mix up a vinaigrette with the fresh basil. Sounds really yummy!

I do a mix of veg: black beans, corn, peas, chopped tomoatoes, green onions along with a vinegarette of lime juice/zest, olive oil, salt and pepper. You can just chop the veg that you have I think, some fresh herbs would be yummy too. The carrots might be too crunchy though, but maybe you could shred them if you want to put them in so they're thinner pieces?

I love it with cucumber, tomato, mint, and feta with a squeeze of lemon juice and a bit of olive oil.
