broth amounts per chicken

I've been making bone broth once a week but it seems we need more bone broth. a 5 pound chicken is making me about 2 1/2 quarts broth I let it simmer for 24 hours. 2 1/2 quarts isn't much at all! I think 4 quarts would be better per week for us. I can't possibly fill my stock pot any higher either. This has just been for meals for DD and I since DH has been out of town I can imagine we would need way more bone broth when he's around. Any words from the wise? WE use it in EVERYTHING pretty much everyday at lunch and dinner. I guess the only thing I reall can do is get a bigger stock pot and do 2 chickens per week Man that's going to get expensive! Ok know I'm just talking out loud...

I have 2 regular sized crock pots and divide my roast chicken into both pots to make broth. I also keep a bag in the freezer of carrot bits, celery leaves, mushroom tops, etc that I throw in there as well.

That's about how much bone broth I get per chicken, too. I also do beef bone broth using "soup bones" and have started to buy chicken backs to make bone broth out of as well. I roast the chicken backs first so my toddler and I can fight over the extra chicken skin and then toss it in the pot for bone broth. If I am making enough bone broth to keep up with what we prefer to use, I am running my crock pot 3-5 days a week.
