Canned Salmon ideas needed!

ANY tasty ideas for eating canned salmon? I get the salmon free from WIC, and have a lot of it in my kitchen... i really need some good ideas please! the only thing I do so far is eat it like a tuna sandwich. (I don't get the tuna cause I'm worried about the mercury.) .... ideas, please!

Depending on the brand there are recipes for patties on the can...I don't have one on hand so I can't tell you the exact recipe. Have you tried Google? "Canned Salmon Recipes"

Salmon cakes - just a can of salmon, an egg, some breadcrumbs and seasonings.

This is the recipe we typically use for salmon cakes. My boys love them.

We use canned salmon in a recipe for salmon fettuccine. Basically, cook the fettuccine, then make a white sauce and add some cheese and the canned salmon to the white sauce. Toss and eat!
Actually, I have leftovers of this in the fridge right now. It's a very easy weeknight meal.

Here's my salmon patties recipe. I got it from my mom. I have no idea where she got it from. I suspect from the can of salmon.

1 15 1/2 can of salmon
1 cup bread crumbs
1/2 cup chopped green onions
2 beaten eggs
1 T lemon juice
1 T cooking oil

Mix all ingredients (except for oil), including the water from the salmon, together in large bowl. Form into 6 patties. Fry in oil over medium heat until lightly browned on both side.

I usually use rolled oats instead of the bread crumbs and coconut oil for the cooking oil. We like it with baked beans, fried rice, or mashed potatos and peas with dill sauce. They are also good as a sandwich, either hot or cold. Mom called the little bones "candy bones" and I've continued the tradition with my kids and now the phrase is on the 3rd generation.

I use it like tuna, on sandwiches, in salads, and in casseroles.

My dh makes a kick butt pasta with a sauce made of canned salmon, cream, lemon and fresh dill (he probably puts a few other things in as well, but I'm not sure what they are).
