chocolate frosting (w/out cane sugar)

I found a recipe I'm going to try to make GF, sugar free cupcakes for my ds who is attending a birthday party on Friday.

But... I'm having trouble finding a SIMPLE frosting recipe. It doesn't have to be dairy free - I'm just trying to stay away from cane sugar with him since he's sensitive to it.

I've got several alternative sugars - just not sure they'd be good in a chocolate frosting recipe, KWIM?

You could make a chocolate ganache - it's just cream & chocolate. You can use whatever (& however sweetened) type of chocolate or choc chips you want.

It's really good whipped, too.

This is what I was hoping to find! I have "vegan" chocolate chips that don't have cane sugar in them - I think those should work for this! Guess all I need now is some creme!

I've done ganache with coconut or almond milk, and it works beautifully. I've also sweetened them with maple syrup. I've never done whipped ganache before though...must try! yum!

Ha! You just reminded me that I happened to have a can of coconut milk! Guess I won't have to go to the store after all! Anyone know if coconut milk will whip up like regular milk would? I also have goat's milk (but it's not "creme"). Hmmm???

Coconut milk does whip--not quite like cream but still yummy. Its works best if you use the thick stuff that rises to the top of the can.
