our garden is gifting us with abundance.
i'm making jam, freezing some, giving them away, plus daily:

in green salads
on cereal
in nut butter sandwiches

what would you do with quart after quart of strawberries?

You could try juicing some. I like a lemon, strawberry, kale smoothie to start the day,

And my favorite recipe, which sounds crazy, but is to die for:

Strawberry Spaghetti

Take one pound fresh berries, hulled and quartered.
Cook in 2 tablespoons full-flavored EV olive oil until reduced and saucy (about long enough to cook the noodles)
Add 2 tablespoons balsamic vinegar (balsamic reduction is better) and 3 cloves crushed garlic + about 1/2 teaspoon salt, and lots of fresh ground black pepper.

Serve with spaghetti.

catnip—the spaghetti sounds interesting! i've heard of Italian recipes for berries with balsamic, but have not tried it. i'll have to take the plunge.

We had strawberry cobbler last night. The cobbler was whole wheat flour, sugar, baking powder, almond milk, and salt. We then poured some almond milk over it when it came out of the warm oven. It was yummy.

BTW my kids could totally get rid of most of those strawberries for ya. They are in heaven with all the berries right now.
