How much you feel comfortable with is totally up to you. I would find no issue with tofu once or even twice a week (tempeh would be better but no biggie), or edamame just as frequently.

Remember that millions of baby boys are raised exclusively on soy-based formula every year, and the long term studies on these little ones show that they are no different - no less healthy - as adults. If soy (and highly processed soy no less) were truly the demon that people make it out to be, we would be able to see significant evidence in this huge sample population.

Personally, I'd probably not eat or feed my family tofu or edamame more than once every month or two. But then, thyroid problems are RAMPANT among the women of my family. If they weren't maybe 1-2 times a month. Likely still I'd only feed my family unfermented soy (that is not chemically processed) every other month or so.

We do eat tofu once in a blue moon, as we find it really tasty. but not very often. Every food that is eaten should be eaten with moderation, soy, more moderation than other foods. It's not something to be scared of, just to eat sparingly.
