Just made some vegan pesto!

I haven't made pesto for a long time since we have gone dairy free because I wasn't sure how to replace the butter and parmesan cheese. I just learned that they aren't needed.
I used lots of cashews, walnuts and brewers yeast, and extra olive oil. And it needed extra salt since I was lacking on salt without the cheese. I tossed it on brown rice pasts and it was so good. And because I didn't have as much basil as I wanted, I used a ton of parsley.

No other protein is needed with this as it has alot from the BY, and nuts. and lots of calcium from the greens.

FWIW, my mom used to make a vegan pesto simply by combining the basil, pine nuts, garlic and olive oil, and leaving out the cheese. Totally delicious. Froze better, too.

Yours sounds good too, but there's not really a big need to get fancy with it...

I was mainly trying to get some protein into it as the cheese would provide that.
