Bok Choy Bolted...now what ?

I want to cry, I was so proud of myself for trying it for the first time. Some of the plants aren't even 2 inches high and they are bolting. What do I do with it now ?

Have the flowers bloomed? If not, still eat it - stems and flowers are SUPER tasty!
