Work lunch ideas (no fridge)?

I don't have access to a fridge at work, and have tried taking a cooler with ice packs with some success - but can you recommend lunch ideas that require minimal to no refrigeration? Vegan preferably? There is generally a 5-6 hour time from the item leaving my fridge to my being able to eat it at work

Thank you!!

Grain or pasta salads usually taste best when eaten at room temp. You have endless variations with those.

Great idea! I hadn't thought of things like tabouli! Thank you!

Maybe make a corn and bean salad, use frozen corn and it should be thawed by lunch and keep the rest of the salad cool.

bean dip or spread you could put on a tortilla with peppers

hummus or falafal travel well, and have veg on the side that doesn't go bad quickly (carrots, peppers, snap peas)

nut butter and banana sandwich
