I want to make a coconut flour cake for DS's birthday. In looking at the available online coconut flour cake recipes, I seem to find 2 variations: one with 3/4 c coconut flour and 9 or so eggs and another with 2 cups coconut flour and 9 or so eggs.

I've baked with coconut flour quite a bit and know the usual ratio of eggs to coconut flour is 3 eggs to 1/4 cup coconut flour (as the first cake recipe variation uses). The problem is sometimes I find this ratio to be too "eggy" for my tastes and that's why I'm leaning towards the 2 cup recipe (which had good reviews).

What I really want to know is have any of you tried a coconut flour cake recipe that used 2 cups coconut flour and 9 eggs? And was it moist and delicious (and stable enough to frost and decorate!)? Thanks!
