Lamb liver is waaay beter than beef liver!

I usually eat grass fed beef liver once a week. I fry it up with leeks and it is ok. We enjoy it. But I never thought that lamb liver would be 100 times better. I don't usually like lamb so I was surprised when I couldn't stop devouring it.
I tried deer liver and it was gross and left me feeling kind of sick afterward.
I got some lamb tongue to try and am nervous... What is the best way to cook it?

Good to know!! I am trying to foray into the recipe-esque version of liver, rather than the swallow-it-so-you-don't-taste-it version.

I am on the search for goose liver, as it is one of the richest sources of K. No luck yet...

Well wait a few months and I will have loads of liver (maybe extra to share) as we just bought a house and 10 acres and are going to raise ducks. We want them mainly for the liver and fat. I was checking craigslist the other day for duck eggs to taste them, and I came across many people listing duck meat for sale. I am hoping to get some liver that way first.

Something else about the lamb liver is that I didn't even fry it with onions or soak it in lemon. It was still way better.

The way I found it was calling some local sheep cheese makers in the area. They all seem to know each other and one was willing to sell me some raw sheep milk and the liver. The farmer charges me $4 for 1.5lb liver and .6lb of tongue. That is a really good deal.

You did???? That's fabulous!! Congrats to you!

Is duck liver as high in K as goose liver? I have been wondering that. I think it is easier to get duck liver around here. I was even thinking of getting a couple of ducks for eggs and tick control, but dh is protesting loudly...

Just tell him you want guinea hens and he will beg you to get ducks!

We much prefer Lamb over beef,not just for liver but for all the meat. I still remember when my husband had a job in the middle East and we lived there, when driving out into the county in the morning. There were little stands where you could order lamb liver. It was fried with a little chili and it was so yummy!

Oh, that's the problem. We've already had guinea hens. We had an, ahem, love-hate relationship with them. It ended with love, but...they were a little high-maintenance. So funny, though.
