Mess 'o Mustard Greens

So, I thought I'd managed to separate out most of the mustard green seeds from the mix I generally purchase and plant, since they grow like weeds and I never can figure out what the heck to do with them.

Of course, they're the only greens that grew for me this year, and even though I've only got a few of them, I still need to figure out what to do with them.

Tonight, I coarsely chopped two heads of them, mixed in with a coarsely chopped half head of cabbage and a chopped apple with some balsamic vinegar and water, and let cook for about an hour (then served with ham). That came out decent, although the kid wouldn't touch it with a ten foot pole.

Got any other suggestions on what to do with mustard greens? Nobody but me will eat them raw, the husband did eat and like the above.

If they go to seed you can have mustard seed/make mustard powder We planted a patch just for seed.

Saute a little onion or garlic in olive oil, throw in the greens and stir them around until they start to wilt, and then pour in just enough water or broth to cover the bottom of the pan (about 1/2" deep). Add a splash of cider vinegar (or any light vinegar, but cider is best), a sprinkling of hot sauce or crushed red pepper, and a little salt. When the liquid starts to boil, cover and simmer on medium-low for about 10-15 minutes or until the liquid is absorbed and the greens are cooked. Serve with blackeyed peas and cornbread!
