Hello. I'm and trying to transition to TF and would like to make my own bread. On another thread last week someone mentioned using Artisan Bread in 5 Minutes a Day. I have this book and had thought about it because the dough does soak for a while, but there is no acid (yogurt, buttermilk, kefir, etc) in most of the recipes to actually neutralize the phytic acid. Should I replace some (how much?) of the liquid or just add it extra?
Thank you. If I can use these recipes which I'm already familiar with it will make transitioning a whole lot easier!
