We soak white beans overnight then cook them with garlic and jalepenos and cumin and kombu and broth or water (we then pull out the kombu when they're cooked.) When the beans are cooked, we make sure they have enough water left to cook the rice, or add that water, and cook the rice in with the beans (cooking the beans more so they sort of fall apart). We mix in cheese, and apple cider vinegar and salt and hot sauce, and often serve with a fried plaintain (not too expensive for one, easy to fry, and it makes the meal feel more special). That's "beans and rice" to us.
we have other bean dishes and other bean and grain meals (usually beans and bread or beans as a side dish for something else like migas (with corn tortillas) though we're trying a new black beans and corn fritter thing.
