vegan recipes for bread (machine) with whole wheat

i am hoping that someone could offer a delicious recipes for bread with whole wheat. My toddler has dietary restrictions so whole wheat, quinoa, canola oil, olive oil, vegetable oil, soy milk, are safe. (we are in the middle of a food challenge so I can not offer any new foods right now) thank you kindly

This is my standard recipe. I have a smallish bread machine, fyi. I give directions for using the dough cycle because that's what I like (don't like the bread cooked in the machine). If you don't mind the shape, etc of the bread machine bread, feel free to use your regular whole-wheat cycle. Also a note: I tried many times to do bread that used more than 50% whole wheat flour, but it is just NOT as good. It's really heavy and dense. You can of course experiment with using more than 50% whole wheat flour, but just know that it's not a sure thing.



Ingredients go into the machine in this order:
1 C + 2 T warm water
1 T brown sugar (or I'm sure agave nectar would be fine)
1 T oil
1 t salt
1 1/2 C whole wheat bread flour
1 1/2 C (white or regular) bread flour
1-2 T vital wheat gluten (optional, but makes the texture a little better)
2 1/4 t active dry yeast

I put this on the dough cycle and then when that's done, I flatten it on a floured surface, fold it in thirds (kind of like folding a t-shirt length-wise), pinch the seams and put it in a oiled loaf pan. Cover and let rise to double (or the top of your pan), about 30-45 minutes.

Bake at 400F 30-40 minutes, cool on a rack. Enjoy!
