On the go snack ideas

I am looking for some easy to grab snacks to take with me for my DS (19 months). Let me explain that he only eats whole foods. Nothing processed. I make many things from scratch to avoid processed foods. I buy fruit and veggies cut them up and freeze along with many things I make. His favorite snack at home and on the go is frozen garden peas. I am okay with that. They are easy to take with us and not messy. But....I need more options. I am looking for healthy things to take that are easy to grab and not messy. I love pulling the peas right out of the freezer and off we go. I would like to keep something in my bag for him as a just in case also. (not an easy one since most things he eats have no preservatives.)
Any ideas welcome

beet cubes
celery
boiled eggs
cucumber sticks
fruit wedges
fruit leather
nuts
make some food bars with oatmeal
i'm seriously obsessed with these
you can make nut/seed crackers too
chickpeas, either raw or roasted...
seaweed/nori strips
sweet potato chips
muffins with lots of whole food ingredients..

Toasted pecans. I heat up the cast iron, and put them and stir them around until they get all nice and toasty. So addictive.
I make enough for a baggie for a few days and bring them with me to snack on while I'm out. Unfortunately my kid won't touch them

You can make crackers or your own lara bar type of snack.

My family likes for me to make some zucchini or pumpkin bread.

My kids like frozen peas as well

Carrots...cooked or raw? I fear choking with raw carrots although I have given him little pieces while watching him. Maybe if I cut thin sticks he could bite them easy enough?
Beet cubes...not sure what this is. I have had pickled beets before but what do I buy and how do I make them?
Fruit Leather...I already planned on making some soon. Do I have to keep it cold?

I do make my own crackers. I was thinking about adding carrots or something to them after running through the food processor next time. Zucchini in my garden will be ready soon. I can not wait to make some bread with them!

Does anyone have any good recipes for food bars with oatmeal or lara type bars? (I do not give DS seeds and nuts just yet but I can substitute things)

Dried apricots, pineapple and apples. We have a dehydrator and DD loves these and so do I.

We just bought a dehydrator last week for the same reason..snacking.
So far we have only made banana chips, but I went to the store today and bought a ton of fruit.

i'd steam the carrots a bit and cut into pieces about the size of the peas. but that depends on how well your babe chews..
fruit leather doesn't need to be kept cold - it's totally packable when it's dried.
beet cubes- i'd just buy some beets - or one, to see if your lo likes them- and dice very small / not chokeable size.. beets are very nutritious and sweet. beets are kind of soft and chewy anyway. you might want to test drive those first at home. beets rock!!

I've posted these a couple times but, they're fantastic. They're made with pureed beans and oatmeal and I swear, you can't tell there are beans in it.

It's very customizable as well. Once you have the basic bar recipe, you can add whatever you like to it. I've made it with fruit and nuts, chocolate chips, seeds, dates etc....

I make a big pan of them on the weekends and then cut into bars and freeze them in individual packets for a quick grab and go protein packed meal:


Bean Bars:
2 cups oats (I used old fashioned)
1 cup whole wheat flour (I've subbed coconut flour but you have to add 2 additional eggs)
1 tsp baking powder
1 tsp baking soda
ÂĽ tsp cinnamon (optional)
ÂĽ tsp salt
one can white kidney or navy beans, rinsed and drained (I've even used black beans with no problem)
ÂĽ cup butter, softened (can sub coconut oil)
1 cup packed brown sugar (I used 1 C coconut palm sugar and 2 T molasses and I've also added a bunch of dates in place of the sweetener)
1 large egg
2 tsp vanilla
1 - 1 1/2 cup any combo of mix ins you like:
½ cup chocolate chips
½ cup raisins or dried cranberries or dried fruit of your choice
¼–½ cup chopped walnuts or pecans or other nuts/seeds
2–4 Tbsp ground flaxseed (optional) (I sometimes forget to add this and they're fine)

Preheat the oven to 350°F. Place the oats in the bowl of a food processor and pulse until it resembles coarse flour. Add the flour, baking powder, baking soda, cinnamon and salt and process until combined. Transfer to a large bowl.

Put the beans, butter sugar or other sweetener, egg and vanilla into food processor and blend until smooth, scraping down the sides of the bowl.

Pour the bean mixture into the oat mixture and stir by hand until almost combined; add the chocolate chips, cranberries, nuts and flaxseed and stir just until blended. Spread dough onto a cookie sheet that has been sprayed with non-stick spray, and flatten with your hand (you may need to grease your hands for this).

Bake for 14–16 minutes, until pale golden. Cut into bars. Transfer to a wire rack to cool.

They are so good! My kids adore them. The actually love them frozen, right out of the freezer. But, they travel so well and keep them full and satisfied.
