black bean inspiration please!

I just cooked a bag of black beans tonight. I'm going to make a cold salad with about half of them, and throw a few more into a leftover quinoa salad. Any suggestions for the rest? I should have a couple of cups left. In cold weather, I'd make chili, but it's too hot...

quesadillas with refried black beans on the side

veggie tacos with zucchini, green pepper, mushroom, onion, avocado, black beans and salsa

cold taco wraps with brown rice, avocado, black beans, cheese, cucumber, tomato, pepper, sour cream

Refried bean nachos

"Mexican" pasta-noodles, black beans, fresh cilantro, chopped tomato, peppers, red onion

Perogi casserole-cooked frozen perogies, canned tomatoes, corn, beans, onion, garlic baked in the oven, melted cheese on top if you want

Beans and rice! SO good, cheap and very good for you!
I make mine (most of the time) with brown rice, hard boiled egg, sour cream, good amount of garlic and other seasoning, and fresh squeezed lime! It's to die for! I generally do add meat and you can do almost anything. Suasage is probably the best in it, but ground beef works as well. This is a staple in our house.

black bean fritters.. mix the beans with kale and sweet potato..with cilantro sauce.

use them in brownies -- you can just search for "black bean brownies." (good excuse to make brownies, huh?)

all cold ingredients:

Black beans (whole or mashed both work well)
Avacado (whole, diced)
Salsa
Cheese (veggie cheese if you're vegetarian & nut cheese if you're vegan - diced)

mix those up together & scoop it up with organic sesame chips (or whatever type of chip!)

We had black bean nachos yesterday for dinner.

Love tortilla lasagna (layer them with cooked peppers & onions, maybe spinach too, tomato sauce mixed with salsa or similar, cheese, tortillas and bake)

I've also done excellent black beans with eggs - warm in a skillet with some salsa or tomatoes and seasoning, extra cumin, etc., heat until bubbling - hollow out some holes in the mix-up and crack eggs into - cover and keep cooking on low until egg whites are cooked through (fast & yummy - we all loved this).

Is there salt in them? If not you can make brownies! they are great! If you don't tell anyone there are beans in them no one will know. There is a recipe in Recipes section of MDC

A quick meal you could: saute an onion, add 1 tbs cumin,1tsp oregano,1 cup of fresh homemade or in a jar salsa,the beans and a little water. cook together until flavors blend. You serve them in a bowl with blue corn chips (or regular) and grated cheese. you can add a little lime juice,more salsa,cilantro on top.

i like an Asian flavors vinaigrette and quinoa, or rice/millet or something, with green onions, cilantro, and tomato....and whatever ot her veggies you lilke. I like zukes, carrot....
