recipie needed - eggplant & beans together??

Or does that sound gross.
Also, one that doesn't require breading & frying the eggplant.

I have eggplant, but DH always wants a meat too. He will be satisified with beans tho - sometimes. So, I was thinking of using the two ingredients together. I really have only made eplant parm & just dont have the time (breading) with my 2 under 2 right now.

What about making a pasta sauce with roasted eggplant chunks and white beans. I would add some fresh tomato, garlic & basil, but you could just toss it in jarred sauce too.

You can make baba ghanouj and serve it with hummus. I sometimes do baba ghanouj, hummus, and tabouli salad, with pita bread adn some raw veggies (cucumber, carrots, etc) or salad. It's pretty filling.

sounds good to me! what the pp's suggested or a curry style meal!

Broil eggplants with a little olive oil, prepare a sauteed chickpea with sundried tomato paste, garlic and spices (cumin, coriander...) then layer the grilled eggplant with fresh tomatoes and the chickpeas. Pour over cheese sauce, top with cheese and broil.

I'm sure you could switch out the chickpeas for other beans if you prefer, or use a pre-made sauce to save time.

what kind of cheese sauce?? like a white bachamel (sp?) based sauce or am I thinking in the wrong direction?

Chickpeas with egglant, spinach, and tomato is North Indian classic. This is an adaptation of the Yamuna Devi recipe, which I use. It works fine with canned beans and tomatoes, as well as defrosted frozen spinach, if you're short on time. If you don't have asafoetida, substitute a couple garlic cloves or an equal amount of both garlic and onion powders.

Yeah - just that... a bechamel with cheese added. So butter, flour, milk (or stock - I sometimes just use water from boiled veggies) cheese and seasonings.
