Vegetable salad meals

I really need to eat more salads (greens, veggies & some kind of protien) but I am bored with my typical salads. What are some of your favorite salad combos?

Greens with mandarin orange slices, nuts and feta cheese with a vinagrette is yummy.

Grain salads such as cooked quinoa with a vinagrette and veggies and/or beans and a green such as parsley are good.

I like grain salads too.

Another idea is to do cold roasted veggies (eggplant, red bell pepper, sweet potato, etc) instead of raw veggies on your greens.

I like to pile up greens, raw veggies, dried cranberries and almonds on a pita and slather dijon mustard all over it. Yums!

Raw kale massaged with sea salt, apple cider vinegar, and olive oil, with chopped apples and pecans on top.

or

Raw kale massaged with sea salt, lemon juice, olive oil and avocado, with chopped tomatoes and pine nuts on top.

roasted beets, feta, and a tiny splash of vinegar on spring greens... YUM!

Just the other day I had a salad that was mixed greens, apple pieces, feta, red onions and pecans with a olive oil/lemon dressing. It was really good, I'm going to try to make it at home now. I might try the lemon infused olive oil instead, and if that's not good, olive oil just whisked with lemon juice.

my two favorites are a taco salad or greek salad. this week we had an asian noodle salad with peanut sauce.... yummo. It came from vegan planet. they have an awesome salad section with unique and filling selection. i highly recommend checking it out from the library.

I love lentils in my salad.

I often add cottage cheese, chick peas, tuna, almonds or cheese to my salads for extra protein.

I am making a quinoa salad for dinner tomorrow

I use black beans, jalapenos (no seeds) red onions, corn, cilantro, tomatoes, lime juice and bell pepper

I made a strawberry salad for dinner tonight with red and green leaf lettuce, grapes, raisins, pecans, strawberries, manderine oranges, red onions and raspberry vinaigrette

I also have this one on my meal plan for the week. I haven't tried it yet.

spinach, caramalised onions, apples or pear and pecans. Cheese of some sort. if you like. A spalsh of Balsamic vinagrette

Mixed greens, caramalise pecans, strawberries and blue cheeese. Balsamic vinagreet or berry vinagrette.

mixed greens, raw ramen soup noodles, sunflower seeds and a lime dressing or plum sauce type dressing

we do taco salad a lot.. lettuce, spinach/kale, seitan, pinto beans, tomatoes, olives, avacodo, peppers, jalapenos, daiya cheese, vegan sour cream and green onions

great with fresh beets from the farmers market, with walnuts and no green even.


Our tomato plant is giving us lots of fruit so I'm doing sliced tomato, sliced cucumber, sliced mozzarella, basil and avocado tossed with some balsamic and EVOO a lot these days.

Our two favorite summer salads:

1. Cold black bean salad
2 cans black beans, rinsed and drained
1/4 red onion, minced
1 bunch cilantro, chopped
1 red bell pepper, seeded and diced
1 mango, peeled and diced
juice of one lime
salt to taste
Avocado is a nice addition if you have some (but it does break down and get yucky if you are storing in fridge, so if you are making this the night before, wait and add the avocado just before serving)

2. Greek fennel salad
1 large bunch romaine, trimmed, cored, cut in half lengthwise, then sliced crosswise into ribbons
1 bulb fennel, with fronds - core, cut off woody stems and remove any tough outer layers on the bulb, chop bulb and tender stems into bite-size pieces, chop fronds as well
1 can white beans, rinsed and drained
3 - 4 scallions, chopped (whites and greens)
1 bunch fresh dill, chopped
few tbsp olive oil
juice of one lemon
s+p to taste


The latter is DS' favorite and he will scarf it right ouf the salad bowl if he can!

Do you have a recipe you use? Do you marinate the lentils ahead of time, or is there any salad where they work particularly well?

I love lentils and just had them cold as a side dish on a poached salmon plate the other day and started thinking "hmm, I could make a salad with these!" but I didn't get any farther than that. Would love some ideas!
