I love lentils and just had them cold as a side dish on a poached salmon plate the other day and started thinking "hmm, I could make a salad with these!" but I didn't get any farther than that. Would love some ideas!

well, I know some people frown upon the kitchen sink type salads, but I literally dump whatever sounds good and that I have. I cook lentils in a large amount with a bay leave, some salt/pepper and a couple garlic cloves, then just keep them in the fridge.

Sometimes i saute greens in olive oil with red pepper flakes garlic and onions, then a splash of red wine vinegar/pinch of sugar/honey, then just pile on the lentils.

Or for a cold salad i kind of use them anywhere you would beans.

I love bitter greens along with romaine, red onion, cucumber, beets, lentils, apple, and an olive oil/balsamic dressing. oh and some kidn of nuts like toasted walnuts...oh and green beans

Fruity Blue Cheese Salad

My favorite combo for Summer is:
Sliced strawberries
Blueberries
Dried cranberries
Blue Cheese
Baby greens or mesculan mix
Toasted walnuts

and either a honey-dijon dressing or a raspberry viniagrette made with raspberry vinegar, raspberry preserves, and EVOO.

Another favorite is:
Chickpeas
Chopped egg
Red onion
Chopped green/red peppers
Little chopped jalapeno
Red Wine vinegar
EVOO
Parsley (fresh)
Chives (fresh)
Garlic, minced or pressed finely

And here's another combo I often get at those "let us toss a salad for you" kind of places, when I'm traveling on business:

mixed greens or romaine
shredded carrot
sliced cuke
chickpeas
sliced green apple
cooked beets
alfalfa sprouts
dijon vinaigrette

I don't know why I never make it at home - I should, since I like it so much!
