Do you have a recipe you use? Do you marinate the lentils ahead of time, or is there any salad where they work particularly well?
I love lentils and just had them cold as a side dish on a poached salmon plate the other day and started thinking "hmm, I could make a salad with these!" but I didn't get any farther than that. Would love some ideas! Thanks ![]() |
well, I know some people frown upon the kitchen sink type salads, but I literally dump whatever sounds good and that I have. I cook lentils in a large amount with a bay leave, some salt/pepper and a couple garlic cloves, then just keep them in the fridge.
Sometimes i saute greens in olive oil with red pepper flakes garlic and onions, then a splash of red wine vinegar/pinch of sugar/honey, then just pile on the lentils.
Or for a cold salad i kind of use them anywhere you would beans.
I love bitter greens along with romaine, red onion, cucumber, beets, lentils, apple, and an olive oil/balsamic dressing. oh and some kidn of nuts like toasted walnuts...oh and green beans
