ground beef recipes that are gluten-free and dairy-free?

Hi everyone!

I learned about Primal Eating about 2 months ago, and after reading some info about gluten intolerance, I told my dh that I thought he was gluten intolerant. He thought the symptoms were the exact same ones he had been experiencing for years. So he thought he would try elimintatin gluten for a while. So far, he has been gluten free for 6 weeks and dairy free for 2 weeks and he is feeling great!

So, I have quite a few packs of ground beef and I don't know what to make with it.

I used to make a tomato beef sauce for spaghetti, meatballs and spaghetti, beef stroganoff, and burgers. What can I make, other than chili, that doesn't have gluten or dairy in it? BTW, neither of us really care for the gluten free subsitutes (ie. brown rice pasta).

I was just coming here to search for gluten/dairy/soy free recipes for ground beef! I have eliminated them for now because my nursling is sensitive, though I hope to add back dairy eventually.

For a marinara....I'm planning on making a batch this weekend to have with some fried polenta (I'm ok with cooking with ghee, but you could use something else) and grilled eggplant and zucchini. I may make meatballs or just meat sauce, depends on time.

We often just have bunless burgers from the grill - with all the toppings/sauces on the plate.

I was also thinking of some sort of sheperd's pie dish, though that seems like more of a heavy winter thing.

Will be watching for ideas! I need the red meat and the grassfed ground beef is most affordable so I'm searching for new recipes

Can you do eggs?

I make meatloaf sometimes without using any grains to "stretch" the meat, and it works fine.

Just the meat, with half an onion cut into it, an egg lightly beaten added, and then some vegetables-- very finely diced zucchini is nice. Then some seasoning-- oregano and parsley and black pepper is my favorite. Then a topping-- a nice thick tomato sauce is good.

We often to brown rice, ground beef, avocado, tomatoes, or whatever you want to throw in a bowl and eat.

I like to make sweet potatoes and top with ground beef that's sauteed in garlic and onion. With a side salad or sauteed greens.

We also to a taco salad similar to the rice bowls above we just sub lettuce for brown rice and throw avocado,salsa,black beans,corn,zucchini, and crushed rice chips on top

my mom cooks gluten free and she uses potato chips in her meatloaf and meatballs in place of bread crumbs.

I do meatloaf or meatballs without any binders at all. Burgers or cutlets (which is what we had last night). Sloppy joes or Mexican food (corn tortillas could be an option if you're willing to eat corn).

If I'm struggling for ideas, I usually just turn them into little cutlet patties and come up with something fun to put on top. Last night we had a mish-mosh, some sauteed mushrooms, some fresh sauerkraut, spicy ketchup, mustard, onions and avocado. It was great - every bite was different.

You can also stuff peppers or eggplant or zucchini. Play with your spice cabinet. See what you come up with. Curried meatballs is yummy, and if you tolerate rice, you can have some on the side to spoon the sauce over.

your meatballs can be eaten inside of half a bell pepper like an open face sandwich

meatza (I loosely follow this without the dairy...adding caraway is yummy and I typically add fennel, too)...we top it with all sorts of stuff and just don't add cheese. The crust holds together great (even without an egg), but the toppings can fall off if you pile too high (since you don't use cheese/glue)...still delicious...just eat with a fork!

make your tomato beef sauce or meatballs and sauce and serve it over spaghetti squash or zucchini ribbons (just use veg peeler to make these...I sautee a tiny bit in ghee and then top). Also, you can just serve it over any veg...broccoli, sauteed zucchini, yellow squash, bell pepper, cabbage ribbons (cook slowly with lots of ghee)...mmm

we make 'pile on' which is burgers with serious amounts of toppings piled on like a buffet at the table...everyone's is different and custom [BTW, I call is 'pile on' b/c bunless burgers made us feel deprived of the bun, but this is a more positive spin on the same concept] I like mixed greens (much more than would fit on a burger), kimchi, lf pickles, mustard, tomato, avocado, bacon, and sometimes baconnaise (bacon fat mayo) if I have some

you can also make a ground beef curry and serve over a veg or just in a bowl

taco salad or taco meat in lettuce cups (cabbage cups are more substantial, but can snap/break if you're not careful...experiment)

PS If you're new to dairy-free you might not be using ghee yet. We love it! It's clarified butter so the milk solids have been removed and just the butter fat is left. We don't love it straight like we used to love pastured butter, but we cook with it all the time and don't have any reactions. It doesn't need to be refrigerated so we easily took it camping.

it's basically ground beef/onions/black pepper/salt, then topped with sliced potatoes, then topped with sliced tomatoes, baked in the oven. sooooo yummy!

Beef shepherd's pie?

We used to do beef tacos with black beans, cilantro rice and toppings (we love jalapeño coleslow and fresh pico ). We do corn tortillas (don't know if you could do that?) but if not you could make it into taco salad or a stir fry.

shep pie? If you are not doing potatoes you can top it with cauli mash, or turnips/sweet potatoes, etc.

I make this really great casserole that's kinda like a shepherd's pie for DH. I use whatever meat, and mushrooms, cabbage, onions, and a gravy then I mix in farmer cheese and a couple eggs after it cools and make hashbrown style potatoes like diced, fried up with peppers/onions and top it with that, then bake it all together.

If you're doing potatoes, do a hash. Ground beef, onions, green peppers, potatoes, and some seasoning. Simple and everyone here loves it!

There is a really good recipe in Nourishing Traditions for tomato-free spaghetti sauce with beef broth, wine, onions, and fresh rosemary. Easy and yum!
