Good Summer/hot weather vegetables?

Hey ladies,

I am in coastal NC and I just harvested some lovely cabbages from my garden. I now have a big space I'd like to fill, but I am wondering: what is a good hot weather vegetable that I can plant right now?

I gets quite hot here in the summer so I need something that can survive high temps. I have plenty of tomatoes and peppers, so I don't want any more of those. Any other ideas? Anyone have success with potatoes? And if so, any tips?

beans and/or corn would be okay to plant now.

Bush beans, zucchini/summer squash . . .

I like bush beans, because they're wonderfully predictable and usually have a quite abundant crop for storage purposes even in hot weather. Basically, all of them you plant together will have mature beans within a couple of days of each other, and you pull up the plants, strip the beans, blanch and freeze (if you want to store).

Thanks for the replies ladies!

I am going to plant some more beans. I had great success with sugar snap peas, but they are all done now. I am going to try out some pole type beans.

I already have squash, zucchini, and watermelon. Still have a little space, thinking I might plant some potatoes. Have never tried it before, so what the heck!

Melons do well in the heat, but can have a long growing season.

It would be pretty late to start potatoes. I'm in central NC, and I plant potatoes in March.

But it's prime time for beans. And it's not too late for tomatoes either!

Oh, and another fun thing to plant is sweet potatoes. Not quite as easy to find the plants, though.
