little recipe help, please

I want to make some no bake cookies for dd's bday on Tuesday. I was thinking of following a recipe similar to this. I will use sunbutter in place of the peanut butter. But, what to do about the 1/2 cup of butter? Right now we do not have a safe semi-solid at room temp fat (except chicken fat, but somehow I don't think that would be good here ). Anyway, what to do? I don't think 1/2 cup of canola oil is the answer, or maybe it is as simple as that? How about just upping the sunbutter? Any thoughts or suggestions??

Can you do flax?

If it were me, I might use sunbutter for half the oil, and canola for the other half. Or use flax for half, and oil for the other half.
And I'd just try half a batch at first to see how it worked. *disclaimer* I never said I was good at baking. lol. But I do love no bake cookies, and got pretty good at making the regular ones.


The cookies set because you heat the sugar, so I think a liquid oil would still work. I know that if you melt sugar, then add a small amount of water and boil it for a minute, you get caramel- it can get really hard depending on how much water you add.

I used to make these with coconut oil and store them in the fridge. Worked very well.

Thanks for the reminder. I think I'll trial sunflower seed and, hopefully, get a chance to dust off the recipe for DS.

We can't do coconut.

When you say flax are you suggesting ground flax seed or flax oil? For some reason I think it is bad to heat flax oil, but maybe I am mis-remembering.
