I want to make some no bake cookies for dd's bday on Tuesday. I was thinking of following a recipe similar to this. I will use sunbutter in place of the peanut butter. But, what to do about the 1/2 cup of butter? Right now we do not have a safe semi-solid at room temp fat (except chicken fat, but somehow I don't think that would be good here
). Anyway, what to do? I don't think 1/2 cup of canola oil is the answer, or maybe it is as simple as that? How about just upping the sunbutter? Any thoughts or suggestions??
