Peaches..... lots and lots of peaches...

We bought a big box of peaches on our way through Georgia over the weekend. I've frozen about half of them (peeled and chopped and put into 1 cup and 2 cup portions to use for muffins/bread/smoothies/etc). What to do with the other half of the box? I don't have enough freezer space so need to actually use some of them... like... now!

Any great peach recipes???

I might be able to borrow a canner and can some of them too.

You'd need to can this but, Zesty Peach BBQ Sauce.

If you have a big pot you may not need a canner. Line the bottom of the pot with rings from jar lids in place of a canning rack and as long as you can get an inch of boiling water over the top of the jars and a lid on the pot then you're good to go. I can do 8oz. jars in the pot I boil pasta in.

canning them can be quite easy. Clean the jars. Add however much sugar you want. Then, blanche the peaches so the skin peels right off. Cut as you like, put peaches in jars, add water to whatever height (3/4 or 1" headspace, I forget...), finger tip strength tighten, heat for however long (10 min?) and voila!

The sugar dissolves over time and in a few weeks you can start to dig in. So much easier/less messy than making syrup.

I LOVE this recipe for peach BBQ sauce. I always at LEAST double it. And it keeps in the fridge for ages... I think the last batch I made with last summer's peaches we ate in March.

I also love them dried, which you can do in the oven if you don't have a dehydrator. I cut them into uniform rings, but I know many people just halve them.

Peach ice cream is also excellent, and I'm planning on making some pickled peaches once the season really picks up (hasn't been hot enough here yet). There are always crocked peaches (soaked in an alcohol syrup), chutneys or jam, too. You can even make syrup for pouring over pancakes or ice cream.

We never have a problem just eating them fresh when we by a box LOL. You could always make a pie or cobbler.

Cobbler is my favorite.

I do a very easy recipe. Melt 1/2 stick of butter in a 9x13 pan. Mix 1 cup sugar, 1 cup milk, 1 cup self rising flour well. Pour batter into pan. Top with about 4 cups of cut up peaches (sweeten if they need it). Bake for about 45 minutes at around 375 (until browned and bubbly). The batter rises up around the peaches (or other fruit). So good.

Cobbler's excellent. Annother option would be to make peach jam, last year I made peach raspberry jam and it was excellent. Most berries go well with peaches.

Also you can peel peaches and chop them up and have with salad. If you like fruit salsa try peach salsa.

5 minute ice cream!

I made peach ginger ice cream the other night and it was to die for!

I blanched 5 peaches (put them in boiling water for 45 seconds or so, then immediately transfer to a bowl of ice water) then I peeled them (you should just be able to pull the skins off with your fingers) and chopped them and then put them in the freezer.

To make 5 minute ice cream - you need
1 bag frozen fruit (I used the 5 peaches but, you can use any fruit - last night I peeled and froze apples)
2/3 cup heavy cream
1/2 cup sugar (I used coconut palm sugar)
1tsp vanilla
Put it all in a food processor and blend until smooth. Makes a soft serve type ice cream but you can freeze it for an hour or so for a firmer ice cream.

For the peach ginger, I grated some fresh ginger in before processing.

For the apple, I added some cinnamon.

Tonight, we're doing banana chocolate chip

I'd either can them or make them into peach jelly/jam Either way though, canning is the way to go

Peach jam is the BEST!

That said, a peach crisp or cobbler would probably be easier.

Peach pie----my favorite!

Peach and hot pepper salsa for fish/chicken/whatever--you can eat that now

I second all the canning ideas--peach jam, canned peaches, peach chutney....
(I feel like the Bubba Gump shrimp guy in Forrest Gump)

Peach crisp topped with crushed gingersnaps

I need my own crate of peaches!

Oh man I forgot I grilled peaches last summer and they were divine. Really good with bacon (sweet and salty combo) or goat cheese if that sort of thing floats your boat.

Peach smoothies -- with a little OJ it's a fuzzy navel smoothie!

Peach butter uses more peaches than jam, is easy to make, and tastes wonderful on pancakes in the winter.
