Angel food cake - alternative sugar(s)??

This could be one of the last Father's Days I have my dad around - he's got an auto-immune liver disease.

He loves Angel Food Cake. So does my husband, myself, our son, our daughter - you get it

I'll be using an alternate flour (like Kamut or Coconut or a mix of both) since my son cannot have wheat.

I also need to see if there is any way to use different sugar(s) or sweetener(s) other than cane sugar. I used beat sugar a couple weeks ago for some cupcakes and it didn't seem to affect him the way cane sugar does. But I'd still rather do something maybe a bit healthier - anything that's not refined???

I don't know what would work with an angel food cake because of the whole consistency (so I don't know that honey or maple syrup would work - maybe whipped honey??). I also don't have a clue if any particular sweeteners/ingredients are bad for liver patients (probably all of them but it's a one-day deal and he probably won't have much).

I really don't know, but I made an angel food cake for ds1's bday a couple months ago and was actually surprsied at how little sugar there was in it... but LOTS of egg whites (like, 10 egg whites or something!!). I don't see why you couldn't sub beet sugar, but I'd be hesitant to do honey/molasses/maple sugar w/o a direct recipe for it. Good luck!!

I would use beet sugar and cut it back but as the other poster said, there really isn't much in most cakes to start with.
