Goat milk Ice cream recipes/advice?

Does anyone have a recipe they can share with me? How do you make it? I really want my DH to try goat milk but he's really put off by the thought of it. Honestly, I was too until that first taste last summer. I think if I can get him to try some ice cream, I might be able to eventually win him over. TIA

Awwww, you are speaking to my heart here....

I am the only person I know who makes guinea egg/goat milk ice cream, lol. As a matter of fact, I woke up to find 5 quarts of goats milk in my fridge. My neighbor has way more than they can use, lol.

I will give you my prized recipe. I use to go to ice cream socials as a kid, and out of all the kinds of ice cream, I had to have my mamas...


Ice Cream Base

5 cups goats milk
4 eggs (or 6 guinea eggs, or 12 quail eggs), beaten
4 cups sugar
3 Tbsp cornstarch
pinch sea salt

Cook in saucepan over medium heat til mixture coats a spoon (use a wooden spoon and wait until you can draw a line w/your finger thru the mixture on the back of the spoon. The lines of either side of where you swipe your finger should remain and not spread). DO NOT BOIL!!!

Strain and cool. (do not skip the straining part as you wouldn't want bites of scrambled egg in your ice cream!)

To use, put base in your ice cream container and add 4 Tbsp vanilla (don't use imitation!) and fill 2/3 the rest of the way w/milk (can add heavy cream or half and half if you want it richer, but it will still be plenty rich w/out!). Crank as usual.

Don't forget to add your vanilla. Trust me on that one, roflmao!

BTW, this is for a 6 quart ice cream maker. You may need to scale this down. If you need help, just ask me!

You can use goat milk in place of cows milk in any ice cream recipe. You probably would want one with eggs in it for the richness factor you'd be missing from the heavy cream. My fave ice cream recipes use honey or maple syrup instead of sugar - they give it a fabulous mouth feel.
