Inexpensive Casserole ideas

I'm in currently taking summer classes for grad school and the classes meet from 5-8PM. We are planning to have a potluck for the last day of class and I signed for a main dish since I live really close to school so transportation is less of an issue for me. I am just not sure what to cook, it needs to be pretty inexpensive to make and can serve about 15 people.

Does it need to be vegetarian? If not, you could do a crockpot of cabbage, potatoes, and ground beef. Cooked in a little milk, with salt and pepper. That's about it, and it's really simple and good.

Obviously you can adjust the amounts to feed more people.


Also, this sweet potato and spinach dish is not a casserole, but it's a one-dish meal that is very easy and pretty cheap, especially if you adjust the amount of meat downward, or eliminate it altogether:

Also something like baked ziti would be quick, cheap, and feed a lot. Even lasagna.

I need to ask my classmates if anyone's a vegetarian. I could always make a big dish with meat and smaller one without meat.

Chili is pretty cheap and feeds a bunch of people. You could make meat or vegetarian, depending on the group's preferences. Ask if someone else will bring bowls, and cook the beans from scratch for the most savings.

Some other good, cheapish dishes are - mac and cheese or spaghetti pie (same idea as ziti or lasagna, though, I guess.)
