Just buy low-sugar/no-sugar pectin and follow the instructions on the packaging.

I agree-- I love using Pomona's Universal Pectin, and it comes with a pamphlet that has recipes. I use the recipe found there when I make strawberry jam, and I use very little sugar.

my dh and fil make a lower sugar jam. they use figs and a few strawberries, and a box of strawberry jello.
i know they make natural jello, and you don't have to use the figs.. it just stretches the berries & makes it seem like it's all strawberry.
(personally i do not like it but DH LOVES it)
let me know and i'll send you the exact recipe if you want it.
