quick picknick for three - any ideas?

Hi there,

a friend of ours and I decided to meet for lunch next friday. He's the future godfather of our #3 and I like him very much, he's a great guy.
Anyways....I need food for a lunchy picknick that can easily be prepared the day before and transported on train.

Here are my ideas so far:
kinda turkish lamb skewers (there is some lamb filet in my freezer that I would like use for those)
bulgur salad
apricot cake (a thin yeast dough as a base, topped w/apricots and loooots of streusel *yummy*)
some soft fruits+a sandwich for his godson, my #3.

I had the idea to also make some turnovers filled w/spinach+feta and maybe another salad?!
There's really no need to make this an elaborte meal but I'd like it to be a nice and relaxed one, yk.

TIA!

Sounds delicious! Instead of another salad, I might just pack some sliced vegetables and some dip, since it would be easier for the children to manage. They are also easy to pull out if the children are peckish before you get to your destination.

You can freeze some lemonade or iced tea or just water, so that they thaw while you transport, and keep everything cool.

If it's just the 3 of you, then I think you have plenty of food. The turnovers sound yummy, but I don't go to all that work unless I'm going to be making a LOT of them - for 3 people it seems like overkill (unless you want to leave some at home or freeze them).

Thank you so much for your suggestions! My laptop broke down and I was forced to be offline for some days

Our little picknick on friday was a huge success! Thanks to my DD pleading I bought this lunchbox carrier/tiffin I am head-over-heels in love with it! No more countless leaking boxes, just a little tower that fits into our cool bag and holds everything at once.

Regarding the food I made chicken saté skewers (no peanut sauce tough, but they were delicious neverthless), this orzo salad from Real Simple Magazine (just omitted the feta cheese, but it was very yummy!), arabian-style carrot salad from a Bill Granger recipe and my usual summery string bean salad with scallions and tomatoes.
Afterwards we had a apricot-streusel cake and gateau aux chocolate.
It was yummy but of course too much

We definitely had lots of fun and will repeat that picknick next week

Thanks again!
Valerie
