daughter wants to eat dairy again (edited)

dd1 showed sensitivity to dairy from an early age. I was dairy free for a large part of her babyhood. We have been GFCFSF for several months now. She just turned 7. She wants to have cheese, mac n cheese, yogurt, and ice cream again. Her father is not GFCFSF (and is quite the dairy/ meat eater) and wants to let her have whatever she wants so this is hard. I want to allow her the choice to try it again, but I don't believe in ingesting dairy for philosophical reasons. Am I right to think that yogurt and cheese are less likely to cause a reaction than liquid milk? I really don't want her to eat these foods again, I am moving towards veganism (for me and dd2), but I don't want to force dd1 to eat my way for my reasons at her age. Have any of you gone dairy free then put it back into the diet? How did it go for you? Should I just give her one thing like a cup of yogurt, then wait a certain number of days?

Wait at least 4 days if you're going to try it to see if there's a delayed reaction. Look for ANY unusual symptoms, because often they change symptoms upon reintroduction.
